The monks know how to make great beer. Since 1862 the Trappist Monks have been making Chimay. It is always brewed on the site at the abbey where the monks make sure everything is correct. The brewery operates from 7a.m. to 4p.m. each day out of respect for the monastic life; they produce two batches each day. Grande reserve is the best of the bunch. It is the strongest and darkest of the three (not as dark as a stout or porter). It has a great smell once it hits your nose. Highly recommended.
